A Quiche Formula*Silver Hills Quiche*A Quiche Formula*Piecrust Place grated or cubed cheese directly upon the crust because it forms a moisture resistant barrier between the filling and the crust so the crust doesn't get soggy. Add chopped and steamed spinach and broccoli to sautéed onions and mushrooms and dry mustard. Add tomatoes and fresh herbs once the other ingredients are sautéed. Add filling over the cheese layer and then prepare the custard. Beat 3 eggs and 1 cup milk. Pour it over top the quiche. Dust the top with paprika. Bake for 35-40 in 375 degree F. oven. Silver Hills Quiche*1 pint tofu cottage cheese Cottage cheese: Rinse and crumble tofu into bowl. Place remaining ingredients into blender until smooth. Add just enough pickle juice or water to form a creamy sauce. Pour blended sauce over crumbled tofu and mix well. Chill and serve. Quiche: Fold veggies into the cottage cheese mixture.
